Beef Nacho Scoops Recipe
Val and I wanted to have something fun to eat, so we decided to make Beef Nacho Scoops. We’ve already made the same with round whole grain tortillas but it isn’t much fun to look at.
So we grabbed a pack of whole grain nacho scoops on our next visit to the grocery store.

The recipe for our meat mixture is pretty much the same to our beef taco recipe. Basically, what you need are:
250 g ground beef
2 tbsp garlic, minced
2 tbsp onion, minced
3 tbsp oil
1/4 tsp cumin
1/8 tsp cayenne
salt and pepper
Simply saute onion and garlic in oil. Add ground beef and cook until brown. Add spices, salt and pepper to taste. Then you may toss in some chopped bell peppers and tomatoes. Great thing about this is that the meat mixture freezes well. So if you can’t finish everything in one go, you can just place your meat mixture in a container and store in the fridge until you’re craving for them again. Oh, you might also want to drain the oil from your cooked beef because it can get really greasy. You really wouldn’t want them anywhere inside your body! Val prefers to add a bit of salsa to his nachos, either medium or hot, for a bit of heat, of course. I, on the other hand, want a bit of melting cheese.
I guess, with nachos, you can pretty much experiment with your toppings. I might just try it with chorizo someday. After all, Cebu is known for its delicious chorizo!
